It's fabulous.
It's incredible.
And of course, I found it on Pinterest!
It has floated around all throughout the last week. It looked amazing, but I didn't pin it. I didn't know if I would really like it and how good could a tomato soup recipe really taste? I love tomato soup, but it's rather warm for soup.
I decided to buy the ingredients knowing it would be a rainy cooler week and tonight was the perfect night to try.
I started the soup at approximately 6:55 based on text messages I was sending. And the soup was in the bowl ready to eat by 7:20. Super easy, super fast and it's a keeper.

Just yesterday, I was claiming my weakness of not making good looking food, but you know what.. I think this soup even looked mighty delicious.
It's soup, it probably will always look appetizing, but score one for me!
And now for the recipe, which I also went against my typical cooking techniques and followed completely (but I added shredded chicken for extra protein).
Creamy Tomato Tortellini Soup
Copied from the Original Source
2 whole large cloves of garlic minced
2 Tablespoons olive oil
2 cans (10 3/4oz) cans of condensed Tomato Soup
1/2 cups Sun Dried Tomatoes, chopped or 2 Tablespoons of Sun Dried Tomato Paste
1 1/2 cup milk
2 cups half-and-half
2 cups chicken stock
1 teaspoon onion powder
2 Tablespoons Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1 whole (9 oz) package of cheese filled Tortellini
1/2 cups shredded Parmesan Cheese
...And as I typed this I forgot I didn't add the Parmesan cheese and it was still amazing!
(I also added shredded chicken.)
Saute garlic with the olive oil in a large stock pot over medium heat until golden brown. Be sure to keep an eye on it so it doesn't get too brown or burnt.
When the garlic is done, add tomato soup, tomatoes or paste, milk, half-and-half, chicken stock and spices. Bring to a simmer. Once simmering, drop noodles into the soup. Cook according to the package directions. Mine takes about 8 minutes.
After noodles are cooked, ladle soup into bowls and top with Parmesan cheese and serve with crusty bread.
I would think there are at least 6-8 servings. The recipe said 5, but there is a lot left.

I highly recommend this soup! Pick up the ingredients on your next shopping trip and let me know how it turns out!!

I want some now!
